What nature gives lasts a whole life!
This implies respecting life, the life of soil, vines and grapes. For this reason we say NO to the use of synthetic molecules. Our aim is to work for the wines to be healthy, to express their terroir and their years. We do not want our wines to be the best, but to be simply our kind of wines: alive digestible wines, which are not produced to respond to temporary trends. They correspond to what nature gave them.
A winemaker’s commitment for a natural wine
Ethics and foundation
Winegrowers who do not wish or cannot assume such a commitment are not obliged to participate in Vini di Vignaioli.
The aim of Vini di Vignaioli is to reach an ideal goal: to produce natural wines without additives.
The winemakers participating in Vini di Vignaioli commit to put into practice such a desire.
The winemakers of Vini di Vignaioli say what they do and do what they say about the whole process of wine making, vine growing, vinification and bottling.
In the vineyards, the practice of organic or biodynamic farming is respected. The harvest is manual.
Vinification is carried out only with native yeasts.
There is no modification to the state of the grape, so there is no recourse to brutal and traumatic physical techniques (e.g. reverse osmosis, tangential filtration, rapid pasteurisation, thermovinification, etc.).
No production factor can be added, the only exception being CO2. The natural wine must contain only a minimum quantity of added sulphites, or zero sulphites.
This declaration requires a maximum of honesty from the winemaker.
For the red wines:
From 0 to a maximum of 60 mg/l
The EU authorizes 160 mg/l
For the white wines:
From 0 to a maximum of 70 mg/l
The EU authorizes 220 mg/l
For the sparkling wines and wines containing more than 5g/l of residual sugars:
Maximum of 100 mg/l
The EU authorizes 400 mg/l
